Sweet potatoes are pretty spectacular!
They are high in beta-carotene and vitamin A, powerful natural antioxidants. Vitamin A is necessary for maintaining a healthy immune system. The potassium in sweet potatoes also helps keep our nerve functions and heart healthy. Additionally, when sweet vegetables like these are added to our diet they reduce our cravings for sweets like candy or other processed sugar treats.
A great way to increase the beta carotene benefits of sweet potatoes is to eat them together with some healthy fats like olive oil or nuts.
To increase the fiber benefits make sure to also eat the peel (we leave our peels on)!
