Which is why we had to share this fun recipe with you, since it makes for a delicious lunch, or even breakfast for dinner.

Think of it as an avocado egg sandwich without the bread.

Plus the extra protein and nutrients from the quinoa will leave you feeling satisfied and ready to tackle all that is ahead of you.

Enjoy this quirky take on breakfast!

Serves 2

Prep Time: 20 minutes Total Time: 22 minutes


  • 1/2 C quinoa
  • 1.5 C water
  • Sea salt
  • 4 eggs, hardboiled
  • 1/2 large avocado – 1 medium/small avocado
  • 1 T olive oil
  • Salt and pepper to taste
  • Cayenne, optional
  • Arugula, kale, spinach, optional but delish!


1. Prep: Cook quinoa, adding a touch of salt (bring water to a boil, then down to a simmer, cook for 20 minutes, then cover). Hard boil your eggs for 10-15 minutes depending on the size of your eggs, peel once cooled. Cut avocado.

2. Assemble: In a large bowl add quinoa, peeled hardboiled eggs, avocado, olive oil, salt, pepper, any other additions and mix well. Plate and serve!

camp trip spotlight: Battery Urban Farm

Our most recently booked trip is to the magical Battery Urban Farm (BUF), a one acre farm oasis in the center of the financial district.

According to BUF, they are home to over 100 varieties of organically-grown vegetables, fruits, flowers, grains, and companion plants – even a wild turkey!

In 2012 alone, they hosted 1,800 students at 30 schools and community organizations!

In collaboration with Grow to Learn, BUF is registered to participate in the Garden to School Cafe program, where they partner with schools, and host them on the farm to harvest vegetables for inclusion in their school lunches, while also providing them with farm and nutrition education.

We can’t wait to visit our friends again at the BUF this summer!

camp trip spotlight: Sweet by Jana

We’ve got our hands full with summer camp programming, and are excited to announce our visit to a small, local company called Sweet by Jana who makes delicious handmade, organic, gluten-free, vegan, raw cookies and confections.
